I was recently lucky enough to try some bbq chicken that had been marinated in this Umami sauce, and it was some of the best bbq chicken I’ve had in my life, no exaggeration. There’s something about the mix of ingredients that, when paired with chicken or fish in cooking, just really makes their flavors pop without too obviously tasting like anything in particular other than just… delicious. Like it made the chicken more chicken-y, if that makes sense. Since I don’t have regular access to a grill I recreated the recipe later by pan searing, and it was also amazing!
Looking forward to trying it with some bok choy, mushrooms & tofu as well. Definitely becoming a cooking staple.
Thanks for this Nigori sake flavor gem! Asian flavors make the baseline of our domestic cooking and this stand alone sauce is a real find!!!
