Madame Susan's Veggie Udon Noodles

This dish is so simple, but is guaranteed to wow your family and friends. Udon noodles are thick wheat noodles usually available at Asian grocers or in the international foods aisle at a grocery store. Udon comes in 2 forms, fresh and dried like Italian pasta. If you are lucky enough to find it fresh, it will be in a refrigerated section of a store. Cooking directions will vary depending on fresh or dried and the particular brand.
Ingredients:
- 1 package of Udon noodles (dried or fresh), follow package directions for cooking (enough for 4 servings)
- 3 cloves garlic, minced
- 1 cubic inch ginger, peeled and minced
- 1 small yellow onion, diced
- 1 bell pepper (any color), cut into small strips
- 1 cup carrot, julienned or shredded
- 2/3 cup celery, cut into small pieces (about 2 stalks)
- 1 cup shiitake mushrooms or crimini mushrooms, sliced
- 2 cups spinach leaves
- 4 tbsp Madame Susan Umami Sauce
- 4 tbsp Madame Susan Sichuan Dipping Sauce
- 2-3 tbsp avocado or canola oil for frying
- ½ cup scallions (green parts), chopped small for garnish
- Optional: 2-3 tbsp toasted sesame seeds (toast over medium low heat in dry pan until golden)
- Optional: 2 tbsp sesame oil for finishing
- Notes: You can use almost any vegetables you have on hand. Broccoli, bok choy, green beans etc. This dish is a great way to use leftover vegetables in your refrigerator.
Equipment:
- Large frying pan or wok
- Large saucepan or pot for cooking udon noodles
Directions:
- Boil water in a large saucepan or pot and cook udon noodles according to package instructions. Set aside in a large bowl. This step can be done simultaneously along with preparation and cooking of vegetables.
- In a dry wok/pan, cook shiitake mushrooms over medium-low heat to remove some water content. This will take about 7-9 minutes and it will improve the texture of your mushrooms and brown them slightly. Do not crowd the pan.
- Heat avocado or canola oil in a wok/pan on medium high heat. Add in minced garlic and ginger. Fry until fragrant and golden brown (3-5 min)

Add in vegetables in this order (in order of time it takes to cook each):
- Diced onions - cook until soft and translucent
- Celery and carrots
- Bell pepper
- Pre-cooked shiitake mushrooms
- Spinach
- Add in 2 tbsp each of Madame Susan Umami Sauce and Sichuan Dipping Sauce to the veggies in the pan. Cook until all vegetables are slightly soft or done to your liking (10-12 minutes).
- Remove veggies from heat and add to cooked udon noodles.
- Add in the remaining 2 tbsp each of Madame Susan Sichuan Dipping Sauce and Madame Susan Umami Sauce.
- Add in chopped scallions, sesame seeds, and sesame oil. Toss together to combine, and serve.
Notes: If you want more salt level, it is best to add soy sauce to increase saltiness. You can also add in more Madame Susan Sauces to taste.
